Dabbling In Decoction is a dry-hopped pilsner brewed with Green Bench Brewing from St. Petersburg, Florida using all American ingredients. We started with a base of floor-malted pilsner malt from Admiral Malt in Alameda, then added a touch of non-GMO yellow corn flakes from Briess in Wisconsin. We did a traditional German-style step mash including a decoction step in which a portion of the mash was boiled and then added back to the main mash to move the mash up to the next temperature rest. This technique enhances malt flavors, bringing out more bready notes. For hops we selected Oregon-grown Mt. Hood, which Green Bench features in their flagship Postcard Pils, and is an American Hallertau Mittelfrueh-derivative prized for its spicy, minty herbal character. We paired it with Lorien, a brand new noble-ish hop from Indie Hops in Oregon which has a delicate fruity and floral aroma perfectly suited for the pilsner style. Both hops were used in the brewhouse and dry hop. Fermentation with our house lager yeast resulted in a crisp, clean pilsner perfect for crushing in the summer heat.
